Soak skewers: If using wooden skewers, soak them
in water for at least 30 minutes to prevent burning.
Prepare marinade: In a large bowl, mix olive
oil, soy sauce, lemon juice, garlic, honey, paprika, cumin, salt, pepper, and
oregano (if using).
Marinate chicken: Add the chicken pieces to the
marinade, toss to coat well, cover, and refrigerate for at least 30 minutes (up
to 2 hours for more flavor).
Preheat grill or broiler: Heat your grill or
broiler to medium-high.
Assemble skewers: Thread the marinated chicken
onto skewers, leaving a little space between each piece for even cooking.
Cook: Grill or broil the skewers for 8–12
minutes, turning occasionally, until the chicken is cooked through and has nice
grill marks.
Serve: Arrange the skewers on a platter,
sprinkle with fresh parsley or cilantro, and serve with lemon wedges.
